Cool Tip: Freeze Your Cheese

I love the tangy taste of goat cheese...but in moderation. Too much goat cheese, and, to me at least, it's a bit overwhelming. And with the soft texture of goat cheese, getting the right amount of cheese throughout a dish has always been a challenge...until now.

When I was working on our flatbed pizza recipe, I put a log of fresh goat cheese in the freezer, then took the frozen log and grated it with a coarse grater, and...voila! A fine sprinkling of goat cheese evenly distributed all over the dish for the perfect goat cheese accent.

A perfect way to enjoy the right amount of goat cheese, without overdoing it!
