Progressive Mini Chopper
In most circumstances, I’m a ‘knife guy’: a good sharp blade in your hand will usually do the job better than some ‘chopper’ …. BUT this business has taught me that there are a few - a small few - choppers that perform their tasks very well, and often better than a knife: more efficiently, yielding a more uniform, attractive product, with less mess and therefore less need for a more thorough and more resource-consuming cleanup. One of these is … the Mini-Chopper, from Progressive.
This works especially well for small quantities: a few cloves of garlic, a handful of peanuts or cashews, a small amount of rosemary or cilantro … the sort of ingredient you need chopped finely to add special notes to a simple soup or an Asian stir-fry … and if you’re doing several of these ingredients for the same dish, then you don’t even have to clean up thoroughly in between ingredients.
Simple place the ingredients to be chopped into the prep cup, or directly on the cutting board inside the chopping collar, and then pound on the top of the Chopper: the stainless steel cutting blade rotates with each firm ‘slap’ on the top of the chopper - 8 turns to a full cycle - and the sweeper blade wipes the chopped product from the inside of the chopping collar. After just a few slaps, you have nicely chopped ingredients - either in the prep cup or on the cutting board - ready to go into your dish. You can control the size of your ‘chop’, all the way from a coarsely chopped onion to almost-dust-like nuts … not as precise as the distinctions between a large or small dice, or a brunoise, but most cooking does not require that degree of precision!
Finally, when all is done, the parts of the Chopper break down for easy cleaning: simply remove the prep cup and the chopping collar, and the blade guard/sweeper blade assembly, rinse thoroughly and put all the parts on the top rack of the dishwasher. To reassemble, simple press on the chopper and align the guard/sweeper assembly with the blades.
