Setting up your mise-en-place before you start cooking is one of those steps that can make you a more efficient (and often calmer) cook. But what do you do about all those small ingredients that need to be added one at a time? You can use a lot of small mise bowls, but then you have to measure, then pour into a mise bowl, then pour into your mixing bowl: too many steps and you've left some behind twice, so your measurements aren't as accurate as they should be.
