Many pie recipes call for blind baking the pie crust. That doesn’t mean that you close your eyes and put it in the oven and hope ... it means you bake the crust without filling so that the crust gets and stays crisp and bakes all the way through. Most pie recipes that have you blind bake the crust tell you to put weights on the crust to keep it from puffing up.
Now you can (and I have) use 1) ceramic pie weights, 2) dried beans, 3) dried rice, or ...you name it! These all have two things in common: they are a pain to get out of the pie shell without chasing ceramic balls, beans or rice all over your counters and floor. And then there’s storage… how many of you have a jar of pie weights, beans or rice in your cabinet somewhere that you keep for pies? There must be a better alternative. And, guess what...there is!
Trudeau has developed a new baking line this year, and we’ve found several products to love in that line. The pie weights, rather than being individual items to place in (and then have to remove from) a pie shell, are a 6-foot chain of stainless steel balls with a European Grade silicone tab at one end to allow for easy removal. Just line your crust with parchment or aluminum foil, swirl the chain onto the bottom of your pie crust, and bake. The chain keeps the crust from puffing and pulling away from the sides of your pie or tart pan. Then, when your done, just pick up the chain by the silicone tab and remove it in one easy motion.
Anyone who’s had to fight with a piece of foil or parchment full of dozens of individual weights, beans or rice can appreciate how simple this chain makes the task. It’s another one of those slap my forehead moments… why didn’t I think of this? But all I can say is that I’m really glad that Trudeau did! Another Cool Tool from the wonderful folks at Trudeau.
