Phase 1 Lunch: Tangy Tuna and Veggie Sandwich

Ingredients:

12 Ounces Water-packed Tuna, drained
1/2 Cup Diced Cucumber
1/4 Cup Diced Chiles
1/4 Cup Diced Dill Pickles
1/4 Cup Diced Celery
2 Cloves Garlic, minced
3 Teaspoons Dijon Mustard
2 Teaspoons Balsamic Vinegar
2 Slices Srouted-grain Bread, toasted

Directions:

  • Combine all ingredients (except bread)
  • Spread the tuna mixture onto the toast
  • Serve each serving with 1C of fruit
