Chop sticks have a lot of uses in addition to getting Asian food from plate to mouth. Here is one: when you're canning, you don't want air pockets in your jars. An easy way to get rid of air pockets is to run a chop stick around the inside of the jar. This settles the contents and gets rid of air pockets. After you do this, make sure to check the head space (space between the top of the food and the top of the jar) and add more food or liquid as needed.
