Even in the best non-stick skillets, it helps to have a little oil to make everything cook and taste better, but if you're watching your weight, that can be a source of extra calories. 

A tip that we developed when we were making our Dukan Galettes was to put a few drops of oil in a warm skillet, then brush it over the surface with a silicone basting brush. This way you get great coverage with very little oil. It works with our Flatbread Pizza to spread oil on the lavosh as well.
