Cool Tip: Poached Eggs... Tamed...

 

Poached eggs are a wonderful treat at breakfast, they taste wonderful and feel healthy (if you dont smother them with hollandaise).

But in many dishes that feature poached eggs there are a lot of moving parts, or there are limits on how many you can cook at one time. The result is that you can't always eat them just as soon as they are cooked.


Here's a method for having your poached eggs ready when you're ready for them:

1. Cook your poached egg by your preferred method (we'll have a Cool Tip on this in a future issue).
2. Remove your poached eggs to a steamer set in a bowl of ice water to stop the cooking.
3. Refrigerate them for up to 6 hours in this water bath.
4. When you're ready to eat them, bring a pot of water to a simmer, then turn off the heat and lower your steamer into the hot water for 1-2 minutes.
5. Serve and enjoy!
