Camerons Mini Stove-Top Smoker
We love smoked food, starting with pork barbeque (there is no other kind, you know!) and evolving to include chipotles of a variety of chilis, and smoked tomatoes for homemade ketchup and tomato sauce. And all manner of fish, poultry and meats! But these have been major day-long projects in the Big Smoker - done very low and slow for hours. So it doesn’t get done as often as it might, because it’s a bit of a hassle.
No longer! We’ve found an indoor stovetop solution that enables you to have smoked whatever, whenever, in a remarkably short time! And you can use it on your outdoor grill too!
The Camerons Mini Stovetop Smoker is a marvel of simplicity and effectiveness! And it’s ideal for preparing a smoked accent for many dishes, just like the pros!
First, choose from 9 varieties of wood chips - 100% real wood, processed to remove the natural resins that leave an unpleasant taste in your food, and chopped very fine specifically for use in the Smoker. Each has its own flavor profile, for pairing with your food: Alder, Apple, Cherry, Hickory, Maple, Mesquite, Pecan and Oak, either plain or Bourbon soaked … each will have a place in your smoking recipes. And it only takes ~1 heaping Tablespoon/15 ml of chips for most recipes, so the 1 pint/47cl tubs will go a long way.
The chips go into the bottom of the main box. Then you line the drip tray with aluminum foil and place it on top of the chips. The 9”/23cm x 5”/13cm wire rack (lightly oiled for easier cleanup) goes into the drip tray and your food goes on the rack. Finally, the cover slides on, to contain the smoke and keep your kitchen virtually smoke-free (although we always use the exhaust fan!). For larger ingredients, you can seal and tent over with aluminum foil. The “Stay Cool” handle on the base will allow you to handle the assembled unit, while folding over the lid for easy storage. For smoking, put the assembled unit onto a single stovetop burner - or on one side of your outdoor grill - and … you’re … smokin’!
The chips smolder under the drip tray and the smoke flows up from under the drip tray and circulates around your food on the wire rack. In a very short period, you’ll have delicious freshly smoked product to include in your recipe: imagine a fully-cooked smoked salmon fillet, or fully-cooked smoked chicken breast, in just 25 minutes. Or, with an aluminum foil tent, you can do a whole smoked chicken in ~45 minutes. Some recipes will require finishing - in an oven or pan or on the grill - but every recipe will have that delicious smoke flavor element! And cleanup is simple: throw out the foil from the drip tray, allow the chips - now fine charcoal - to cool and then toss them into the garbage. Then lightly scrub the wire rack as needed, and put all the pieces in the dishwasher.
