Phase 2/3 Lunch/ Dinner (6 Meatballs) or Snack (3 Meatballs): Turkey Bacon Meatballs

We haven't really made meatballs before (not sure why), but these are so good, we'll definitely make them again!

Servings: 4

4 Slices Turkey Bacon, cooked on the microwave grill and diced
1 Pound Ground Beef
2/3 Cup Fresh Spinach, chopped in the Cubico Chopper
1/3 Cup Chopped Celery
1/3 Cup Chopped Green Onions, white and green parts
2 Garlic Cloves, minced with the Garlic Rocker
2 Teaspoons Tamari
1 Teaspoon Dried Thyme
1/4 Teaspoon Dried Rosemary, chopped
1/2 Teaspoon Sea Salt
4 Teaspoons Whole Grain Mustard

  • Preheat oven to 375 Fahrenheit.
  • When chopping your veggies, cut them small. It will be easier to form smooth meatballs.
  • Heat the bacon in a nonstick skillet for 5 minutes. Set aside to cool.
  • Combine all the ingredients (including the bacon) in a bowl and mix until just combined.
  • Form 24 meatballs and place them in a baking dish. Bake for 25 minutes.
