Here's an all-purpose quick pickle recipe to add a little zip to your meals.
Servings: 2 Cups
2 Cups Thinly Sliced Vegetable or Fruit (onion, Cucumber, Carrots, Apple, Pear, Etc.)
3/4 Cup Vinegar (red Wine, Champagne, Vinegar of Your Choice)
3/4 Cup Water
6-8 Teaspoons Sugar
1 Tablespoon Salt
1/4 Teaspoon Spice (cumin Seeds, Coriander Seeds, Dill Seeds, Caraway Seeds, Star Anise, Cardamom--let Your Spice Flag Fly!)
1/4 Teaspoon Additional Flavor (chili Flakes, Garlic, Ginger, citrus zest, Preserved Lemon, Etc.)
- Put slices in clean jar, pack well, but not so tightly that there isn't room for the liquid. Leave about 1" at the top of the jar.
- Put remaining ingredients in a saucepan and heat over medium high heat, stirring to dissolve salt and sugar. Simmer for 5 minutes.
- Pour warm liquid into the jar until the jar is filled to just cover the slices (about 1/2" from the top of the jar).
- Make sure the slices stay submerged in the liquid.
- The quickles are ready in about 30 minutes, and may be kept in the refrigerator. The flavor will intensify over time.
