One of the best things to happen to cooking are the reusable non-stick baking sheets that you can use to line pans. Of course the number one benefit of non-stick anything, is that things don’t stick; that means that your food comes out (and off) the way you intended, you can use less fat, and clean-up is so much easier. And the benefit of a reusable non-stick sheet is that It’s greener than using single-use parchment paper. But not all non-stick sheets are created equal.
For years we used the various silicone-based sheets, but found a number of problems with them: they can’t be used at very high heat, they shouldn’t be washed in the dishwasher, so they never really feel clean, and they retain odors. We’ve taken their commercial non-stick oven pan liners and created a set of 3 sheets: 2 for half-sheet pans (11.5” X 16.5” or ~29cm X 42cm) and 1 for a quarter-sheet pan (8.5” X 11.75” or ~21.5cm X 30cm) for approximately the same price as one silicone-based half pan sheet.
These sheets are reusable, reversible, flexible and dishwasher safe. They don’t retain any odor or flavor, so they can be used for any dishes. They are made of a composite Fluoro Polymer plastic combining two extremely high-grade compounds coated and encapsulated around a fabric structure, resulting in a tough, economical, flexible cooking sheet. The basic chemical component is PTFE and it’s PFOA-free. These sheets are rated for 500°F/260°C. If you need to make them smaller, they are completely cuttable to the size you want.
We’ve used these for a few years now, making Frico (totally addictive cheese-y crackers) and a number of other dishes, and while they do discolor a little after multiple uses, they still work perfectly. We love them, which is why we chose this as our very first Colbrook Kitchen Exclusive! This is a very Cool Tool!
